Everyone knows the Australian summer can be quite harsh so it isn’t surprising for anyone to not want to head out for a bite in the scorching heat.
If you’d prefer to stay at home with your fan or air conditioner, you can still prepare a refreshing dessert to help combat the hot weather.
Below, you’ll find five easy to make dessert recipes that you can prepare at home. Each dessert comprises three ingredients or less and ideally should cost you no less than $10.00 to buy.
Fruit Fools

Ingredients

200 ml whipped Cream ($1.99)
100 gm fruit of choice (we choose strawberry – $4)
Cooking time
5 – 20 minutes
Instructions
1. Chop your fresh fruit of choice. We chose strawberries but they can be swapped for most fruit. Photo: Brenda Yap
2. Simmer the chopped fruits with a bit of sugar to make it soft and syrupy. Photo: Brenda Yap
3. Whip some cream. This should take 2 – 3 minutes with an electrical hand mixer set to medium speed. If you prefer to use a whisk, it may take 15 – 20 minutes. Aim to get the cream firm with slightly soft peaks. Photo: Brenda Yap
4. Fold fruit into whipped cream. Photo: Brenda Yap
Orange Sorbet

Ingredients

2 cups of orange juice ( Roughly 400ml – $2)
¼ cup + 2 tablespoons sugar
½ teaspoon salt
5-6 cups of ice
Cooking time
5 minutes
Chilling time
4 hours +
Instructions
1. Mix all the ingredients together. Photo: Brenda Yap
2. Put mixture into a container and place inside the freezer for at least four hours or leave it overnight. Stir every two hours. Photo: Brenda Yap
Nutella Popsicle

1/3 cup of nutella ($5.00)
1 cups of milk ($3.00)
Cooking time
5 minutes
Chilling time
4 hours +
Instructions
1. Mix all the ingredients together. Photo: Brenda Yap
2. Pour the mixture into the popsicles mold, leaving about a centimetre from the top and place the mold into the freezer. To get the popsicle out of the mold, simply pour warm water over it for 30 second before removal. Photo: Brenda Yap
Icebox Cake

Ingredients

200 ml whipped Cream ($1.99)
1 bag of Oreo cookies ($3.99)
Cooking time
10 – 25 minutes
Chilling time
2 – 3 hours
Instructions
1. Whip some cream (the same procedure as advised with the Fruit Fools dessert above). Photo: Brenda Yap
2. Spread a spoonful of whipped cream on top of a cookie, and top it with another cookie. Repeat until finish. Photo: Brenda Yap
3. Frost the log with the remaining whipped cream. Photo: Brenda Yap
4. Let it rest in the fridge for at least 2 hours. Photo: Brenda Yap
Lemon Cheesecake Popsicles

8 oz. of cream cheese ($4.90)
¼ cup of lemon juice ($2.00)
(lemon extract if desired)
(1 cup of milk for less solid form)
